You could go about acquiring vmware vsphere, once acquired create new VMs and to these VMs mount ISOs of whatever server OS you would like and run like this. If you want to get more specific then shoot away

Apologies, I meant to say 64bit server OS>vCenter>vSphere client>VMs running server OS.

What kind of virtual server are you wanting to setup? There are several choices out there and each has a big following.
